Cooking with Collagen

Collagen powder is a popular ingredient in the wellness world due to its numerous health benefits. It is known to improve joint health, boost skin elasticity, and promote overall gut health. But did you know that collagen powder can also be used in cooking and baking? Here are some tips from our founder Eryn Behan and recipes to help you incorporate collagen powder into your daily diet:

1. Smoothies: One of the easiest ways to incorporate collagen powder into your diet is by adding it to your morning smoothie. Simply blend your favourite fruits, vegetables, and a scoop of collagen powder. You can also add some almond milk or yogurt for a creamier texture.

2. Baked Goods: Collagen powder can also be added to baked goods like muffins, pancakes, and bread. Simply add a scoop or two to your batter before baking. This will not only add some extra protein but also make your baked goods more moist and tender.

3. Soups: Collagen powder can also be added to soups and broths to make them more nutritious and flavorful. Simply whisk in a scoop of collagen powder to your soup or broth, and let it simmer for a few minutes.

4. Energy Balls: Another way to incorporate collagen powder into your diet is by making energy balls. Simply mix together some collagen powder, nuts, dates, and your favourite seeds. Roll them into balls and store them in the fridge for a quick and healthy snack.

One of Eryn's favourite recipes for those cold winter months is Collagen Chick Soup, "My family absolutely loves this on a Sunday afternoon sitting around the fire"  says Eryn Behan, Founder of NEE-V Collagen.

Collagen Chicken Soup

Ingredients:
- 1 pound chicken breasts
- 8 cups chicken broth
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 scoop collagen powder
- Salt and pepper to taste

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery and sauté for 5 minutes.
2. Add the chicken breasts and chicken broth to the pot and bring to a boil.
3. Reduce the heat to a simmer and let cook for 20-25 minutes, or until the chicken is cooked through.
4. Remove the chicken from the pot and shred it using two forks.
5. Return the shredded chicken to the pot and add a scoop of collagen powder. Stir well and cook for an additional 5 minutes.
6. Season with salt and pepper
